Summer fun!

Our summer has been jammed packed with lots of activities.  Today was a play date after summer enrichment classes at school.  Naomi has been wanting to get together with her good buddy "C" since the school year ended last month.
 We started with a yummy picnic lunch.
 Then they spent some time at the splash pad.  Not too crowded today - yay!
 Then we went home to do a little craft I've seen floating around pinterest for some time now.  I blogged about it in detail on my craft blog right HERE.
Sharpie tie dye t-shirts - they turned out great! 
Even though they were all exhausted, they still managed to enjoy some Yogurtland before C got picked up to go home.  
So thankful for a fun-packed day with good friends.

hello monday|twenty

hello to being published!  Yes, it is a very small part, but this simple piece of mail art that I created has been published in inchie form in FEATURING magazine. It's exciting and gives me inspiration to send out more of my work.
hello Art Concepts and Techniques class. I am taking an on-line art class through Penn State and am learning so much already. Glad to start somewhere towards some of my larger goals.
hello to some breathing room.  I've been working on MINIMIZING and trying to scoop up a little cash here and there and have been doing a major de-stash of my scrapbooking supplies.  I still had a lot of CM stuff that I was carting around everywhere and I decided it was time to let go.  I need to make room for things that matter and are relevant to what is important to me right now.
hello to getting myself back to moving.  I know I have to get back to a regular walking/exercising routine. I must do it.  I was at the doctor earlier today and my blood pressure was very high. On top of some stress I've been experiencing, I know that the added weight gain has really messed me up. So I must get it together.
hello to a summer schedule.  I love summer break!  I am one of those moms that doesn't mind having the kids home every day! We love it! I let the kids sleep in - something we rarely do in this family, we stay cool by swimming, going to the beach, having picnics... We eat healthier - it must be the warm weather and the yummy, available produce that pushes us to want to eat fresher - cleaner!

hello monday|seventeen

hello triple digit temperatures! Looks like the warm weather is here to stay. Got over 100* this weekend.  My husband promised the kids he'd "hose them off" and he kept true to his word. They had a blast.  We sure do miss having a pool.  It's been a couple years, but we still talk about how awesome it was while we had it.
hello first time dentist visit - this would be for my little guy. We are hoping he gets a good report.
hello birthday dinner - We are looking forward to a birthday dinner for my father-in-law this Friday. I have been blessed with wonderful in-laws and love getting together with them when we can.
hello senior pictures - We are headed to the beach this weekend for Hannah's Senior pictures. The family is looking forward to playing and enjoying the beach while she gets her picture taken. It means that announcements will be sent out shortly after!
hello family fitness - We've made a decision to really get moving this summer.  Hannah will be attending school nearby and it will start this summer. She will also be playing summer water polo for the college. The two youngers will be attending swim camp and Taryn will hopefully be playing some volleyball.  We plan on getting out more and MOVING and being ACTIVE.  I am excited about this and really hope we can stick to it!!
hello paleo eating- It's high time we start meeting up again! I was doing so well until sometime around November.  I let "life" and stress dictate what and how I ate and it's time I reclaim that control. It may be slow getting started, but once I'm in - I know I can do it.
hello RLS - why do you have to haunt me?  Hoping the improvement on my eating and exercise will help relieve some stress and in turn relieve some of the RLS.   
hello monday mugshots.   This is how I've got my washi tape and baker's twine sorted.  I got these lovely dishes from a friend in Pennsylvania.  I love them and use them for all sorts of things!  In my mug today is Lipton's Vanilla Caramel Truffle tea.  It's one of my favorites.

Mexican Style Shrimp Cocktail

This is a perfect summer snack that can even be a meal!  I sometimes add imitation crab meat and serve it on tostada shells.  My husband and I have been watching our carbs and eating something like this sure helps us feel like we are not being deprived of anything yummy!  
We eat it right out of the glass like this since we are not eating tostadas, crackers or chips right now.  It is very refreshing, easy and healthy!
Enjoy!

Ingredients:
1 lb. cooked jumbo shrimp- peeled, de-veined and chopped... A few can be left whole for presentation. ;)
1 Large Roma Tomato diced
1/2 cup peeled and chopped cucumber
1/4 cup chopped cilantro
1/4 cup fresh lime juice
1/4 cup of tomato/clam or tomato/shrimp juice cocktail such as Clamato
2 stalks of green onion chopped
1 large avocado peeled, pitted and diced
Salt to taste
Tapatio or other hot sauce to taste.
Combine all ingredients. Chill for about one hour (if you can stand to wait - haha!) and serve in glass dish with saltine crackers, tortilla chips or crunch tostada shells on the side. 


 I prefer Roma Tomatoes for cooking. 
Limes for lime juice... 
This is the tool I use to squeeze my limes. =) 
 Make sure your avocado is just right!
 Chop your cilantro making sure to not leave leaves or stems too large.
Dump all ingredients in a non-reactive bowl, combine, chill and serve.

Sherry's 10 napkins Baked BBQ Pork Ribs

Not too long ago, a good friend of mine called to give me a heads up on a really good sale on steaks and ribs at my local grocery store chain.  That's a good friend, I tell ya! =)  I was getting ready to go grocery shopping, so it was perfect timing.  She mentioned that she got some pork ribs and she was telling me that she got it from the meat case and by listening to some of the other ladies that were ordering, she was able to really ask for a good piece of meat.
So, I took her advice and asked my butcher to do the same thing.  I asked for a whole rack of pork ribs, which happened to be about 6 lbs.  You want one that is trimmed of excess fat.  I asked him to cut it down the middle and crack it.  My friend wasn't sure what the ladies meant by "crack it", but now we do. =) There is a section of bone on a whole rack of ribs that goes across the top and is hard to cut through.  "Cracking it" is when they cut through that bone for you. See top, right piece of meat in the picture below.
I've cooked ribs in the oven before, but I usually cut up my rack and then boil it first.  I wanted to bake these from start to finish.
These were thee best ribs. Ever.  So, I will tell you how I made mine and you can either be jealous ;)  OR you can make some too.  I think the latter statement is the better thing to do. =)

Sherry's 10 Napkins Baked BBQ Pork Ribs
Ingredients:
6 lbs. whole rack pork ribs - split and cracked =) and trimmed of excess fat
Dry Rub Ingredients
1 teaspoon of each:
chili powder
black pepper
cayenne pepper
onion powder
garlic powder
Mrs. Dash original blend
smoked paprika
1 TBS Kosher Salt
5 or 6 dry bay leaves
Directions:
Cut the rack into sections.  Mix dry ingredients in a bowl.  
Sprinkle dry mix generously onto your meat, then rub it in being sure to get both sides. I use my hands!
In a large 13x9 glass dish, place about 4 or 5 dry bay leaves.  Arrange your seasoned meat with the meat side facing up and then add about an inch of water to the pan.
Place in a 200* oven, uncovered for 1 hour.  After an hour, check the water level and add more if needed. 
Bake for another hour.
After the second hour, remove from oven and turn up to 300*.  Pour out any water left in the dish.
Using a basting brush, liberally cover the ribs with barbeque sauce and cover with foil.  Bake for 30 minutes.
After 30 minutes, turn up temperature to 350*.  
Remove meat from oven, uncover and add more bbq sauce.  Return to oven for 25 more minutes.  
After 25 minutes, put meat under broiler for about 5 minutes to crisp up the edges, but keep an eye on it.
Three hours later - but you will have THEE best ribs.  Seriously.  Try it and tell me if this is not true.

Of course, we had corn on the cob and potato salad to make it the perfect summer meal.   
Next time I make this, I will put it on the gas grill for the last few minutes instead of the broiler.

Another school year is over...

Wow.  You blink just a few times and another school year is over!!  
My Hannah is now a SENIOR.  Seriously? Can that be true? I can't help but shake my head as I type.  She had some struggles in math/chemistry...but did really well other than that and got two varsity letters (Water Polo and Swim)

Taryn finished the 7th grade as an honor roll student all three trimesters and is ranked #9 out of almost 400 7th graders.  We are so proud of her drive and determination to do her best.
Taryn with two of her friends at a graduation party.  They'v been friends since they were four years old.
 Naomi was glad to take an end of the year gift for her teacher.  We got a beach towel, drink tumbler and filled it with ice tea mix packets, sunblock and Subway gift card.

 Mr. C was such a great teacher for Naomi.  
She had a great first grade year.
This is Marco who will be 5 years old at the end of July.  He starts Kindergarten in the fall.  This mama may be just a wee bit emotional about that. *sigh*  I know he will be a good student.  He's so curious and hungry to learn about everything.  He was a little stressed when we went to pick up the girls from their last day of school.  He thought it meant that he was starting that day and he didn't know how to write all of his letters!  I had to stop myself from laughing.  He was so sincere and worried about it.  You should have seen the relief on his face when I told him that he still had time to learn. =)

Our summer is already off to a great start.  The two olders have enjoyed some time at the home of some friends, gone to the beach and have a water activity with the youth group and plans with their aunt and uncle for the weekend.  The two youngers have spent some days at the park which has a splash area and wonderful playgrounds, "lake", etc.   Today we spent the day at the park and had a picnic.  Naomi wrote a list of what our day would be: Picnic/eat, go for a walk around the lake/explore, get wet, play in the playground and get wet some more.  They completed the task.  It was an awesome day.

I asked the kids what they'd like to do this summer and here are some of the things they mentioned - big and small.
  • Go to the beach
  • Go to San Francisco
  • Visit Grandma (their Great-Grandmother) on the way to San Francisco.
  • Go to an amusement park.
  • Establish an exercise routine for all of us.
  • Eat healthy and lose weight.
  • Read
  • Help Marco get ready for school.
  • Have picnics
  • Grill outdoors more often
  • Go to Market Night as much as possible this summer (huge farmer's market)
We shall see how it goes! We are already on track!!  How about you, my friend?  What are your summer plans?

Hello June and welcome summer!!

This is the last week of school for my children.  I will then officially be the mother of one SENIOR in high school (Hannah), one EIGHT grader (Taryn), one SECOND grader (Naomi) and KINDERGARTENER (Marco).
All four children will be in school this fall.  It's a bittersweet feeling, really.
Hoping to make the most of this summer.  We all have plans of:

  • getting in shape
  • getting organized and simplified
  • making the most of each day
  • spending lots of time outdoors
  • catching up on reading
Of course, there will be a lot of other things thrown in for good measure, but this is what we're thinking for now.  How about you?  Do you have any big plans for the summer?  =)

I will have to upload some of the other pages, but frankly, I've been so busy creating and having fun with my family this summer that I haven't been able to post the way I'd like. I'm not going to stress! I need to be present. I need to enjoy the moment and not just worry about the next thing to be done. Ah...summer!
